2 tbsp butter
1 tbsp olive oil
1.5 lbs onions
3/4 cup dry white wine or any white you have
1 tomato or 1/2 cup of any type of canned tomato ( I used chili ready)
4 cups chicken broth
1 oz thinly sliced prosciutto chopped (I used 1 oz of regular bacon)
1/2 tsp dried thyme
Melt butter with oil, add onions and saute until golden brown, about 20 minutes. add wine simmer until wine evaporates, about 4 minutes. add tomato and saute 1 minute. ( remove from heat transfer 1 cup onion mixture to blender. add 1 cup chicken broth and puree until smooth. return puree to the pot.) I eliminate the part in parenthesis. add remaining 3 cups broth, chopped prosciutto, and thyme. bring soup to boil. reduce heat to medium-low, cover and simmer 30 minutes to blend flavors.
